Dodo (Amaranth)

The best stidedish for any season. This healthy recipe works best with fresh leaves.

Ingredients
  

  • 4 Handfuls Fresh Amaranth /Dodo leaves
  • 1 Chopped White or Purple Onion
  • 1 Chopped Tomato
  • 1 tbsp Cooking Oil
  • Salt
  • Chili Pepper OPTIONAL

Instructions
 

  • Wash the Dodo leaves thoroughly
  • Cut/Chop the Dodo Leaves and set aside
  • Chop the Onions, Chili pepper(Optional) and Tomatoes and set aside
  • Pour Cooking oil in a frying pan and heat it up on Medium heat
  • Add the Chopped Onions to the Pan and stir it up for 1 minute or until brown.
  • Add Chili Pepper while at it...(OPTIONAL)
  • Add the Chopped tomatoes, Salt and keep stiring until soft.
  • Add the Dodo leaves and Stir the Mixture well.
  • Cook for a few minutes, until the dodo leaves look bright green and tender.
  • Remove from stove and Serve as a side dish
