Dodo (Amaranth)
The best stidedish for any season. This healthy recipe works best with fresh leaves.

- 4 Handfuls Fresh Amaranth /Dodo leaves
- 1 Chopped White or Purple Onion
- 1 Chopped Tomato
- 1 tbsp Cooking Oil
- Salt
- Chili Pepper OPTIONAL
Wash the Dodo leaves thoroughly
Cut/Chop the Dodo Leaves and set aside
Chop the Onions, Chili pepper(Optional) and Tomatoes and set aside
Pour Cooking oil in a frying pan and heat it up on Medium heat
Add the Chopped Onions to the Pan and stir it up for 1 minute or until brown.
Add Chili Pepper while at it...(OPTIONAL)
Add the Chopped tomatoes, Salt and keep stiring until soft.
Add the Dodo leaves and Stir the Mixture well.
Cook for a few minutes, until the dodo leaves look bright green and tender.
Remove from stove and Serve as a side dish
